VEGETABLE MEAT LOAF


  • 1/4 pound beef
  • 1/2 slice bread, torn into small pieces (about 1/4 cup)*
  • 1 egg yolk or white
  • 2 tablespoons shredded carrot
  • 1 tablespoon chopped onion
  • 1 tablespoon chopped green pepper
  • 1 tablespoon chopped celery
  • 1 tablespoon chili sauce or catsup 
  • 1/4 teaspoon salt
  • Dash each of pepper and garlic powder


1. Mix all ingredients except 1 tablespoon chili sauce.

2. Shape mixture into loaf, 3x21/2 inches, in ungreased shallow baking pan.

3. Spoon 1 tablespoon chili sauce over loaf.

4. Cook uncovered in 350ยบ oven until done, about 45 minutes.

* 1 tablespoon plus 1 teaspoon dry bread crumbs, 1 tablespoon plus 1 teaspoon wheat germ or 2 tablespoons oats can be substituted for the bread pieces. 


Basic Meat Loaf: omit carrot, green paper and celery.
