PICKLED BEETS

  • 1 can (8 ounce) sliced beets, drained (reserve liquid)
  • 1/4 cup vinegar
  • 1/2 cup sugar
  • 1 small cinnamon stick


1. Add enough water to reserved liquid to measure 1/2 cup.

2. Heat liquid mixture, vinegar, sugar and cinnamon stick to boiling, stirring occasionally. 

3. Place beets in glass bowl; pour liquid mixture over beets.

4. Cover and refrigerate at least 4 hours.
