LEMON PUDDING

  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 egg yolk, slightly beaten
  • 1 tablespoon margarine or butter
  • 1/2 teaspoon grated lemon peel
  • 3 tablespoons lemon juice


1. Mix sugar and cornstarch in 1 quart saucepan; gradually stir in water. 

2. Heat over medium heat, stirring constantly, until mixture thickens and boils. 

3. Boil and stir 1 minute. 

4. Gradually stir about half of the hot mixture into egg yolk. 

5. Stir egg yolk mixture into remaining hot mixture in saucepan. 

6. Heat to boiling, stirring constantly. 

7. Boil and stir 1 minute. 

8. Remove from heat; stir in remaining ingredients. 

9. Refrigerate until chilled.
